Never Tell A Pig Your Secrets. They squeal too much. I’m squealing right now though. Just look at this juicy, crunchy pork shoulder blade roast. So easy: let it sit at least an hour to get to room temperature. Cut grooves across the top fatty side, rub liberally with salt, pepper, my secret ingredient is Vietnam 5 spice. Throw in a pan fat side up, and fill with an inch of broth. Roast until meat thermometer says 150 to 180. Let it sit ten minutes before touching it.
